Food and Innovation go hand in hand and this time it’s our all time favorite Indian dessert - Kulfi which got a totally new avatar when it got rolled over the huge icy cylindrical rollers.
As the name suggest, the making of this Kulfi is self explanatory. A huge iron cylinder is filled with crushed ice. This cylinder is then put in a stand that has a pedal on one side. This is taken care of by the two men every time: one who does not lose a single minute to roll the cylinder; and the other who prepares the layers of kulfi by crushing fruits and pouring rabri and milk. All different kinds of fruits – mango, banana, papaya, orange, pomegranate, etc. are added one after the other and interspersed with rabri.
What you get at the end is shavings of Kulfi served served in a bowl
This Kulfi has also got another name which is disco kulfi for a reason being the disco-like movements of the roller and the variety of fruits used that gets into it.
If you wish to savour this, then you might need to visit the most popular and authentic vendors like Bablu Kulfi and B.K. Variety Kulfi of Delhi that offers a great taste by blending flavours that are natural with no synthetic syrups or sweeteners used.
